Strawberry Horchata is one of my favorite drinks. It has been a long lasting tradition at home due to our spaniard heritage. Horchata or orxata means the same. One is in Spanish and the other name is in Catalonian. The drink came originally from Valencia, Spain, however on my recent trip to Barcelona, orxata is very common drink during the summer.

My husband and I enjoyed several glasses of that original orxata during our stay. The horchata in Spain is made with nuts called “chufas”, cinnamon and sugar. The chufas are an almond like nut that has been cultivated for centuries. And in Valencia, chufas have been certified by origin. Just like grapes or fine wine.

In Mexico, we do not grow “chufas”, so that ingredient has been replaced with either almonds or rice, and also dried melon seeds. The preparation of the original horchata can take several hours to make. Sometimes a whole day as the rice or the almonds require to soak enough time to be ready to use in the horchata recipe.
