I’m bringing you a classic dish today with a keto-friendly twist! Pinwheels are a staple at most parties and potlucks. Who doesn’t love a tasty tortilla packed with meat and cheese? It is always such an easy, crowd pleasing dish! These low carb pinwheels only have five super basic ingredients you probably already have on hand.

Bonus: you can easily change up the ingredients to get a bit of variety. This recipe is great with sliced deli chicken, ham or roast beef. It also tastes amazing with shredded Swiss, Gouda or Pepper-Jack! Check out my tips below for the best keto pinwheels that are never soggy!

Ingredients for Keto Pinwheels

You will find the exact recipe and instructions below, but this is a basic overview. To make low carb pinwheels you will need:

  • Tortilla: low carb, keto-friendly tortillas that range between 4-6 net carbs are readily available at grocery stores. Check the bread aisle, or near the deli section.
  • Cream cheese: full fat or reduced fat cream cheese work well in this recipe.
  • Deli meat: this recipe calls for turkey, but deli ham, chicken or roast beef all work if you prefer.
  • Bacon: I cook bacon strips and cut them into small pieces. However, precooked bacon bits that are found in the salad aisle will also work.
  • Ranch Seasoning: this refers to dry ranch dressing, not already prepared salad dressing.

How do you keep pinwheels from getting soggy?

Have you ever made pinwheels only to discover hours later that the tortilla is soggy and unappetizing? No worries, I can help! An easy solution is to use a few paper towels and pat the deli meat and bacon completely dry. Often, packaged deli meat can contain a lot of moisture straight out of the package, and this can be a problem. Drying the meat off before preparing your rolls will solve it!

How do you keep tortillas from cracking?

Warm the tortillas 15-20 seconds in the microwave so they are easily pliable and roll easily instead of cracking. This is an especially important tip when using gluten free or grain free tortillas, as they are prone to cracking easily.
