My kids and hubby love it! And so do their friends.

Several years ago, I made my first dairy and egg free corndogs through Money Saving Mom’s freezer lunch challenge.

At the time, however, I didn’t realize what a big deal eggless corndogs really were.

Yes, dairy-free corndogs have hit the market over the years.

But boy, finding dairy AND egg free corndogs is next to impossible.

The moms in our community are always asking…

and this is the post I point them to because we have done it!

That’s right, mama, we’ve made dairy and eggless corndogs for years.

And your kids are going to love these bite-size treats!

Don’t forget the ketchup.

Money Saving Mom taught me that we could easily make corndogs as muffins.

Corn muffins with hotdogs!

Yeah, baby. No sticks. No frying.

Sign me up.

And while my kids and family definitely liked the muffins for so many years,

I’m super excited to be taking these to a whole new level 10 years later.

Gosh, I’m old.

Recently, I saw these made as MINI muffins and that made so much sense.

While this recipe has always been delish…my family’s only complaint was…

“too much muffin, too little hotdog”.

So mini muffins solve this problem perfectly!

Just the right amount of corn muffin along with just the right amount of hot dog.

Even though I’m serving these up to big eater teen boys now, they are an even bigger hit than they used to be!

Now, if you’re like I used to be and the thought of cleaning a mini muffin pan hardly seems worth it…

take this tip from me.

Actually, you need all the pans this company makes. I love their donut pan for easy donut-making.

And I have their bread pan, cookie sheet, jelly roll, two round pans, mini cakes pan, and probably more.

Clean-up is so fast and easy. Huge time and sanity saver!

Here’s how I make the corn dog muffins.

First, for the corn muffin mix…

you can use this cornbread mix and still make them dairy and egg free.

Or you can go with the homemade cornbread recipe below, easy peasy.

Second, for the hotdogs…

we love these dairy-free hotdogs.

Simply mix up the cornbread batter.

Cut five hotdogs into equal 1-inch pieces.

Fill each well of your mini muffin pan 3/4 full with cornbread batter.

Put a piece of hotdog into the center of the batter.

Bake on 400 degrees for 7-10 minutes.

Did I mention these bake really fast?!

HOW TO MAKE EGG-FREE CORN DOGS

Mix up your allergy-friendly cornbread batter.

Grease a mini muffin pan. No grease needed for USA pans.

Fill each muffin well 3/4 full with corn muffin mix.

Cut hot dogs into 1″ long pieces.

Place one hotdog piece vertically into the center of each muffin.

Bake according to the cornbread recipe you’re using.

Bake on 400 degrees for 7-10 minutes until golden brown and done to the touch.

Serve warm with a side of ketchup.

Store leftovers in the refrigerator for a few days or freeze longer for quick lunches. See instructions below.

CORNBREAD DAIRY & EGG FREE

INGREDIENTS

1 and 1/2 cups dairy-free milk (original, unsweet)
1/2 tablespoon vinegar
1 cup cornmeal
1 cup flour
1/4 cup sugar
1/2 teaspoon salt
1 teaspoon baking soda
2 tablespoons vegetable oil
3 tablespoons unsweet applesauce

DIRECTIONS

Preheat oven to 400.

Combine dairy-free milk and vinegar. Let sit.

Mix cornmeal, flour, sugar, salt, and baking soda in a large mixing bowl.

Whisk oil and applesauce into the milk and vinegar.

Add milk mixture to the dry mixture. Stir just until combined.

Fill mini muffin tin wells 3/4 full with the cornbread batter.

For corndog muffins, insert hotdog piece into the center of each muffin before baking.

Bake for 7-10 minutes or until golden brown and done to the touch.

Serve hot.

HOW TO FREEZE CORN DOG MUFFINS FOR LATER

Bake your muffin corn dogs.

Place cooked muffins on a cookie sheet and flash freeze in freezer.

Then place frozen corn dogs into a freezer bag or freezer container & store in freezer.

Pull out individual corn dogs as you need them. Reheat in oven or microwave.
